Review of Diaya Cheddar Cheese- Yummy!

* Update: Since cleaning up my diet more, I no longer buy this product. Canola oil is one of the main ingredients, and I try not to eat that particular oil. The product does taste good, and if the company were to use a different oil, I would probably buy it occasionally.

So, if you haven't picked up any Daiya cheddar style shreds, what are you waiting for?! Seriously, this stuff is good!

I get mine from my local Whole Foods. To me, this stuff actually tastes better than cheese. It melts fabulously, but honestly it took me a few packs for it to last long enough to try it melted. :)

Diaya cheese is free of genetically modified ingredients, and word is out that it is free of msg. I wouldn't call it a health food in that I don't know of any health benefits, but it's mighty good on broccoli, so maybe it is good for you in that it helps you to consume more veggies??





I actually read an account of a lady complaining to her waiter that he had given her real cheese when she ordered vegan cheese on her pizza at a restaurant. I can see that happening... take a look at it melted on an Amy's California style veggie burger:

7 Vegan Cheese Options- Dairy Free Cheese Recipes

If you are eating a vegan diet, or you can't tolerate dairy, here are some cheesy recipes for you! These recipes will give you the dairy free cheesiness you crave...

1. Introducing Sliceable Vegan Cheese. This recipe is a 10! The taste is just plain cheesy and good. It is good on crackers, or eaten alone.

2. This next recipe is called Raw Pesto Uncheese Sauce. It is quite tasty over raw zucchini 'noodles'. I can imagine it would be a good salad dressing as well.

3.  This Parmesan Cheese Substitute complements pasta quite well. I would also think it would go well in soups, chilis, and salads.

4. This Ricotta and Cottage Cheese substitute goes good on pizza and lasagna. I wouldn't use too much of it though. A little seems to go a long way.

5. Seed Cheese has an interesting taste and texture. I would use it sparingly and possibly as a compliment to #4.

6. Cashew Cheese reminds a bit of alfredo. I have used this to make vegan lasagna, and I think it would go well on noodles, or as a baked potato topping.

7. The last vegan cheese I would like to recommend you will have to buy at a store. Whole Foods is the only one that carries it in my area. It is called Daiya Cheese, and it looks like shredded cheese. The flavor is yummy. It melts and goes good on anything you would normally put cheese on.

Yummy Vegan Mocha Recipe, Sugar Free Version

I have been very successful for a while now at cutting down my sugar intake drastically during the week. However, the homemade iced mochas my hubby and I have been drinking on the weekends had become problematic, in that I wasn't satisfied with the taste unless I used sweetened almond or soy milk. Until now. :)

After trying lots of different approaches I have finally (and happlily) settled on the following recipe. It really does matter what brand of stevia you use for this. NOW Foods organic stevia is non bitter, tastes great, and can be found at Whole Foods.

The following will make 4 10 oz. iced mochas.

For this recipe you will need:

  • 5 cups of unsweetened almond or soy milk (or milk of your choice) 
  • 2 tablespoons cocoa
  • 2-4 tablespoons instant coffee (I use Mount Hagen Organic-Cafe, the safest and healthiest available locally, at Whole Foods.)
  • 7 packets of NOW organic stevia, or about a dropperful of the liquid. (I now prefer the liquid.)
  • 1 tablespoon walnut pieces (optional, adds frothiness and a nice taste)

  1. Put all ingredients into blender. (I recommend the Ninja.)
  2. Blend for about two minutes. 
  3. Pour in glass over ice.
  4. Enjoy! :)

Vegan Lasagna Recipe


His and her lasagnas. :) This is what my husband and I had for lunch last week. It was my first vegan lasagna and it was very tasty. The only thing I may do differently next time is add a bit more cashew cheese. For this recipe you need:

  • regular size box of lasagna noodles, prepared
  • 16 oz. can of tomato sauce, or more if you want it saucy
  • 1-2 cups of uncooked veggies, blended together (I used the Ninja)
  • @ 2 cups of cashew cheese
  • @ 1 cup of seed cheese
  • parmesan cheese substitute for sprinkling
  • optional, salt to taste
    The very first thing you do is preheat your oven to 350.
    Then put down your first layer of lasagna noodles:

    Now slather on some cashew 'cheese':

    Apply veggies and seed 'cheese' on top of cashew 'cheese':

    Add another layer of noodles and repeat until its all ready to put into the oven:

    Take your lasagna out of the oven after about 30 minutes. Sprinkle parmesan cheese substitute on and Enjoy!

    Cashew Cheese Substitute Recipe- Vegan and Dairy Free!


    This is a very tasty cheese substitute recipe. I used it to make vegan lasagna. I think it would be pretty good on pasta, too. To make this recipe you will need:
    • 1 1/2 cups of cashew, soaked
    • 3 tablespoon nutritional yeast
    • 3/4 cup almond milk
    • 1 teaspoon onion powder
    • 1/2 teaspoon garlic powder
    • salt to taste
    Simply put all of the ingredients into a blender, such as the Ninja, and blend until smooth and creamy.
