Foodie Friday: 3 Chili treats to cool you off! :)


I live in the south, and the weather has been in the 80s some days for a few weeks now. If the weather is warm where you are (or even if it's not), you may like to try these cool treats! :)

The best, easiest vegan ice cream recipe around!

I tried this recipe about a week ago, and I was very pleasantly surprised. This super-easy, vegan ice cream recipe has the texture of soft serve ice cream. How identical the texture is to it is truly amazing. The base for this recipe is actually frozen bananas! You can really make up this ice cream recipe any way your heart desires. I made a few batches experimenting with different flavors. Two of my favorites are:





Vanilla (makes 2 servings)

2 frozen bananas
1/2 cup of almond milk
a few drops of vanilla

a sprinkle of cinnamon and/or ginger is optional

Blend in blender till smooth and serve immediately. This ice cream is super yummy drizzled with this simple, vegan chocolate sauce.





Strawberry banana (makes 2 servings)

2 frozen bananas
5 frozen strawberries
1/2 cup of almond milk
1/2 tsp. mint
sprinkle of ginger

Blend in blender till smooth and serve immediately.

You can add chocolate to the mix and have chocolate ice cream. I did this too:

Trader Joe's Soy Creamy Mini Chocolate Sandwiches Product Review


While browsing the ice cream section at Trader Joe's, I came across some soy ice cream. I thought about getting a tub of chocolate, but then I saw these mini soy ice cream sandwiches.
 



I had never tried soy ice cream before, but I was eager to try these. Well, I am happy to report that I couldn't have been more pleasantly surprised! The cookie part of the sandwich is sweet and very chocolaty. The soy cream in the middle is not as rich, but it has an excellent flavor. The ice cream's consistency was just right, and it really more than satisfied my ice cream craving. Quite honestly, I prefer it over ice cream made with milk. It is just GOOD.

As far as ingredients and nutrition- well some of the ingredients are listed as organic. There is some sugar in these yummy vegan bars, but they are sweetened with other natural sweeteners as well. And, each bar is only 90 calories.

All in all, what a yummy little snack! My only suggestion to the makers of Soy Creamy ice cream would be to rename it Soy Dreamy!
