This is in my bowl almost everyday. I have been eating avocado chocolate pudding for about a year now (not continuously, lol:). I think it is delish. I have been weaning myself off of sugar for a while now. I now use honey and agave nectar. It took me a little while, but now I am using only organic raw honey. Trader Joe's organic raw honey is extremely sweet and yummy! Unlike processed honeys, this organic honey has a thick, creamy texture. It is very smooth. You only need to use a very small amount to get a lot of sweetness. I give it two thumbs up and recommend that you try it as soon as you can!

Sweet and Sour Chinese Style Veggies and Rice

This is a recipe that I really like. It has a sort of sweet and sour flavor, yet no sugar or corn syrup. Yay! This recipe will make about 4 servings.

This is a recipe that I really like. It has a sort of sweet and sour flavor, yet no sugar or corn syrup. Yay! This recipe will make about 4 servings.
To prepare this dish you will need:
- cooked brown rice
- 2 yellow sweet onions, diced
- 1 celery stick, diced
- 1 bag of frozen organic broccoli
- 1/2 a bag of frozen cauliflower
- 2-3 carrots, shredded
- 1 tsp. ginger
- 1/2 or 1/4 teaspoon of salt
- 1 tablespoon crushed garlic
- 1 tablespoon coconut oil
- 2 teaspoons sesame oil
- soy sauce to taste
- 3-4 tablespoons of sesame seeds
- 1 tablespoon of lemon juice or apple cider vinegar
- a tablespoon or so of maple syrup
I use my wok to prepare this.
- First put your coconut oil into the wok and let it come to medium temperature.
- Next, add onions and garlic. Allow these to sautee for about 15 minutes. Add the salt to bring juices out.
- Next add ginger and half of the sesame seeds.
- Add frozen broccoli and cauliflower. Let cook for another 15 minutes.
- Now add the shredded carrot and diced celery. Let cook for about 10 more minutes.
- When dish is done cooking, add the rest of the sesame seeds, the sesame oil, soy sauce, and honey.
- Serve with brown rice. (It's healthiest!)
- Enjoy! :o)

Chocolate pudding made from avocados!

This is by far the best chocolate pudding I have ever tasted. It is dairy free, but mine is not vegan as I use honey to sweeten it. And it does a great job of sweetening it, I might add!! :o) I originally found this recipe on VeganCoach.com, which is an extremely informative website for vegan cooking. Even if you think this won't be good, make it once and give it a try. I am very sure you will pleasantly surprised. Just writing this recipe makes me want to make more. It's so yummy! - 2 small avocados or 1 large
- 1 tablespoon cocoa
- 1 tablespoon (or to taste) of maple syrup, agave nectar. It is best to add no more than 1 to 2 teaspoons or sweetener before you mix the pudding. It will turn out much creamier this way. Extra sweetener can be mixed in by hand before eating if desired.
- The first thing you need to do is peel the avocados and cut them into chunks
- Now put the avocado, cocoa powder, and sweetner into a blender or food processor. I put mine into the chopper portion of the ninja.
- After it has been tossed about a bit in the ninja, it comes out creamy and sweet and chocolaty and YUMMY. You will need to blend for a while to get it extra creamy and dissolve all of the small pieces.
My husband and I actually had this for breakfast Sunday morning. Did I mention this is the best pudding I have ever had?? Let me know how you like it! Enjoy!
