Try It Tuesday: Review of Eden Organic's Yellow Organic Popcorn


My husband makes popcorn in the air popper almost every night. We used to get just regular popcorn kernels until I learned that corn is one of the most genetically modified foods around- which means if you aren't buying corn specifically labeled organic, it's probably genetically modified.

If you try to stay away from as many GMO foods as possible, like we do, then you'll be glad to know that Eden Organics offers organic popcorn kernels. You can purchase 20 oz. of this popcorn online for $3.09, or look for it in your favorite health food store.

We usually eat our popcorn drizzled with KerryGold Irish butter, and sprinkled with mineral rich salt.

Foodie Friday: Sweet and spicy smashed sweet potato recipe


This could be eaten as a healthy snack or dessert. It tastes kind of like sweet potato pie to me. Yummy.

Sweet potatoes are so healthy. Read about their health benefits .

I started this recipe by steaming a large sweet potato until it was tender. If you have average sized sweet potatoes I would use 2 for this recipe. Don't forget to use organic produce.

I put the sweet potato in a bowl and just smashed it with a fork. Then I stirred in the following ingredients:


  • 1 tablespoon of honey (read health benefits of honey here)
  • 1 1/2 teaspoons of cinnamon
  • 3/4 teaspoon cumin
That's it. A simple, yummy snack that is good to eat hot or cold. Enjoy! :)

Review of Pure Organic and Pure Naturals bars- Healthy and yummy!


When you are on the go and want a healthy snack, it doesn't get much better than Pure Organic and Pure Naturals bars. These convenient and healthy snacks are organic, raw, vegan, nutritious, and yummy.

The story of how the company started is very interesting. The founder's daughter decided she wanted to become a vegetarian after a visit to a petting zoo when she was six years old. Her mom realized that they could begin a new healthy eating journey together, and so they created these healthy raw snack bars in their own kitchen.

These bars taste good. All of them. Even the flavors that aren't usually my favorite. Even the ones I thought I wouldn't like. They have appealing texture, appealing flavor, and the added bonus of being good for you.

These bars are sweetened with agave nectar and they all have some kind of nut in them The texture to most of them follow this pattern... a ground up mixture of ingredients, with bits of nuts, and some with dried fruit. Very tasty. I suggest you give them a try for sure!

On My Plate... grape tomatoes and oranges, Yum! :)

Grape tomatoes and oranges has been my snack of choice for a few weeks now. Even though the weather is cold, they are so sweet and yummy. We get organic tomaotes from Trader Joes or Walmart, and the organic oranges we buy from Whole Foods. Let's see what nutritional value and health benefits these particular snacks have to offer...

Tomatoes

Tomatoes provide about 68% of the daily value of vitamin C. They are also high in vitamin A and K. They are rich in the phytonutrient lycopene, which studies have shown helps to prevent cancer. Organic tomatoes supposedly contain more lycopene than nonorganic. I do believe this nutrient is more readily available in cooked tomaotes however.

They are also a good source of fiber. And they contain potassium, niacin, vitamin B6, and folate- all vitamins that contribute to heart health. Studies have shown them to reduce cholesterol, and the juice of the tomato may prevent blood clots and act as an anti-inflammatory.


Oranges

One orange contains about 116% of the daily value of vitamin C. They are also high in fiber. 

They have several phytonutrients that have been shown to reduce blood pressure, cholesterol, and inflammation.

They also contain compound called liminoids, which are unique to citrus fruits. These compounds have been shown to fight cancer. 

Oranges also help to prevent kidney stones, ulcers, and protect against rheumatoid arthritis.

Fun and healthy Fall snack, apples with peanut butter

Clearly this is not a difficult recipe to make! :) But it is so good. To me, this tastes nostalgic of a caramel apple one would get at the fair.

Even though this recipe reminds me of Autumn, it was summer when I first tried it. My Mother took me to a festival at our local park as a child, and there was a booth there where a lady was handing out apple pieces smeared with peanut butter. And the rest is history. :)

All you need to make this treat for yourself is... you guessed it!

  • an apple
  • peanut butter (Use a natural brand such as the super yummy Skippy Natural with Honey)

Cut up apple, and smear on peanut butter.... or, you could dip! :)

Vegan Strawberries and Cream Recipe

This recipe is very tasty and nutritious. It is good for breakfast, a snack, or even for dessert. It's pretty simple to make. All  you need for this recipe is:
  • 1/2 cup of raw cashews, soaked overnight
  • 1/2 cup unsweetened almond milk, or milk of your choice
  • @ 4 frozen strawberries
  • 1 teaspoon agave nectar
Having the strawberries frozen really lends a nice chill to this recipe. I put all of the ingredients in my Ninja and blend until the mixture is smooth and creamy. You can make adjust the recipe and make it thin or thick. Here are some photos of it both ways. Yum! :)

How to make a super yummy fruit smoothie

With smoothies the sky is the limit. I'll tell you one of my favorite smoothie recipes and give you a few hints I've learned along the way. First of all you need a good blender that will crush ice well. I use a Vitamix. (If you don't have one, click through one of the banners on my blog to get free shipping. Or send me an email and I'll send you the code.) If you add banana to your smoothie gives it a good creamy base. And, my daughter and I both prefer using a tablespoon or two of sugar free orange juice concentrate in our smoothies to give it that added tanginess and sweetness. For a little extra sweetness, some stevia can be used. And, a couple of pieces of ice give a nice thick iciness to the overall drink. But, if all of your fruit is already frozen the ice won't be necessary. So... here is a yummy smoothie recipe for you to try:

This makes one smoothie:
Half a cup to one cup of soy or almond milk (or your fav. milk or milk substitute)
a cup of strawberries
half of a banana
1 tablespoon of sugar free (organic) orange juice concentrate
3-4 ice cubes if fruit is not frozen
a dropperful of NOW organic liquid stevia
half a cup of greens - optional

Blend until smooth and creamy. Pour into a glass. Enjoy! :o)
