Review of Trader Joe's Organic Sprouted Tofu

Trader Joe's now sells this sprouted tofu. I like it; it tastes just like regular tofu to me. And personally,  I think this is the best tofu option, since sprouting makes it more digestible and reduces phytic acid.

This is actually half of the pack as it comes with two individually wrapped blocks. I like to bake my tofu, then add it to some veggies like in the picture below.

Foodie Friday: Tofu taco with fat free slaw, and raw corn salad. Yum! :)



I bought some sprouted tofu from Trader Joe's last Saturday. I've been thinking of how to prepare it, and remembered this yummy dish from last summer.  I'm not really sure how I'll prepare this sprouted tofu, but if you are in the mood for some really really tasty homemade vegan food this weekend, give this a try! :) Recipes here.

Tofu Plus Review

I ate Tofu Plus a few times last week. It is a new tofu made by Nasoya that contains vitamins like D, B vitamins, and calcium. Here is the tofu in the package:

My local Walmart wasn't carrying this new TofuPlus when I checked, but Food Lion did and that is where I got this.

So, now you can get an extra nutritional boost when you eat tofu. :)

This has got to one of my top ten favorite meals. The recipe for the raw corn salad can be found here. It is good on the taco as well, and I'm sure I added some after this photo was taken. :)

For this recipe, you will need:

  1. Place slaw in tortilla.
  2. Place a few pieces of baked tofu on top of that.
  3. Serve corn salad on the side, and in the taco.
  4. Enjoy! :)

How to bake tofu flavorfully

Baked tofu is good to put into many dishes, such as salads and tacos. It is also good with barbeque sauce. :) To make baked tofu, you will need:
2 tablespoons coconut or  your favorite oil
1/2 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. salt
1/4 tsp. cumin
1 tablespoon nutritional yeast (optional)
1/2 tsp. curry powder
(If preparing for a Chinese dish, you may want to add 1/2 tsp. ginger)

  1. Melt oil on medium heat on the stovetop. 
  2. Add spices and stir well.
  3. Add cubed tofu and coat well in mixture.
  4. Let boil for a few minutes to infuse flavor.
  5. Transfer to casserole dish and put into oven at 350 degrees.
  6. Cook for @ 30 minutes, flipping tofu halfway through bake time.
  7. Enjoy!

Chinese style soup with chunks of tofu

This is a really tasty soup that doesn't take long to make. It is based on a recipe that I found in a really neat vegetarian soup cookbook (link coming soon). I was pretty hungry when I made this and liked it very much. This will make enough for about 4-6 bowls of chunky soup.

Ingredients:
1 cabbage, chopped
2-3 carrots, chopped
1 sweet onion, chopped
1 block of tofu, coated in oil and baked
soy sauce to taste
4-5 cups of water or vegetable broth


First of all, cup tofu into blocks and coat in coconut and/or sesame oil. Bake in oven for 30 minutes, flipping halfway through cooking time to ensure even crispness. Here is my tofu after cooking:



Once the tofu is in the oven, you will need to cook your veggies in a wok or frying pan in a little oil. Using sesame oil will lend a  nice flavor.

Don't cook your veggies too long as they taste nice with a little crispness. Now add the water or vegetable broth to a pan and add about 2 tablespoons of Kikkoman soy sauce. Then add veggies and tofu. Bring water to boil then cut off heat. Your yummy soup is now ready!

Vegetarian Turkey Alternatives for Thanksgiving

Thanksgiving is coming up very soon! I would like to wish you all a very safe, joyful, and blessed Thanksgiving. I would like to share two videos that I have found online that I think do a very good job of walking you through Thanksgiving dinner preparation. In the first video, the Vegetarian Librarian makes individual tofu 'turkey' dishes for her guests. In the second video, the chef in the Tiny Vegan Kitchen will walk you through preparing a premade Tofurkey, as well as creating some side dishes. I am planning to make myself an individual tofu 'turkey' sometime soon. I will document that to share when I do! :o) I hope you enjoy these videos as much as I have.

Breaded Tofu Nugget Recipe

Tofu nuggets can be the main dish of a meal, or they can make a good snack. If you like tofu, you will like tofu nuggets. I find that they grow on you, and it is good to have something to dip them in. I like ketchup, but some people prefer Ranch dressing. This would make a good vegetarian kid's food. To make tofu nuggets, you will need:

  • bread crumbs
  • firm or extra firm tofu
  • blended flax mixture, 2 tbsp flax to 3 tbsp water
  • garlic powder
  • cumin
  • soy sauce

First you will want to press your tofu to get rid of access water, as it is packed in water. 



Once your tofu has drained, cube it like so. You may also want to add a little soy sauce (and toasted sesame oil if desired) to the tofu for extra flavor. 



Now, get your bowl of mixed flax seed mixture. 

Get your bread crumbs handy. Put about half a teaspoon of garlic powder and cumin in them.  I toasted two pieces of bread to make my bread crumbs.



Work with one nugget at a time, dipping it in flax mixture, then dipping it in bread crumbs. Try to get each nugget coated evenly. Pop them into the oven for about 20 minutes. It is good to turn them over 10 minutes into their cooking so they will be a bit crispier.



Here are the tofu nuggets fresh from the oven. Let them cool down for a few minutes. Heat causes them to get a little mushy, so they need to firm back up.

Grab your favorite dipping sauce and some nuggets, and, Enjoy!
