Most people like sloppy joes, and eating vegetarian or vegan doesn't have to stop you from enjoying a pretty good one! :) Today I made sloppy joes with tempeh, but if you prefer, the tempeh can be replaced with tofu or beans or whatever! For this recipe you will need:
Filling ingredients
- 3-4 cups of crumbled tempeh (or tofu, beans, etc.)
- 1 onion, diced
- 1 red pepper, diced
- 1 clove of garlic, diced
- 2 tsp. coconut oil
- 1/2 tsp salt
- 1/2 tsp. curry powder
- 1 tsp. chives
- 1/2 tsp. chili powder
- 1 tablespoon coconut oil
- 1 tsp. cinnamon powder
- 1 tsp. chili powder
- 1/4 tsp. onion powder
- 1 1/2 cups ketchup
- 1 tablespoon mustard
- 1 teaspoon molasses
- 1/2 tsp. cinnamon
- 1/2 tsp. chili powder
- 2 tablespoons white wine vinegar
- 1/2 tsp. liquid smoke
Use the coconut oil to grease a frying pan or wok, then add all of the filling ingredients to pan. Cook on medium, stirring often, until veggies are done.

Now it's sauce time. Put the coconut oil in first, and add the spices to that. Stir well with a whisk. Then add the ketchup and mustard, and whisk again. Next add the white wine vinegar, liquid smoke, and molasses, and whisk. Take off of heat once it is heated through. Add sauce to filling mixture and allow to cook together on medium heat for around five minutes. Scoop on a bun, and enjoy! :)
