Wikipedia says that this dish originated in Britain, originally made from beef with a crust of mashed potatoes. It was geared toward 'cottage' dwellers, i.e. the working poor. Anywho, it turned out to be a surprisingly good dish- one that I can see being a go-to meal for sure. I used tempeh in the place of beef, and topped it with Daiya cheese. (Tip: Add Daiya cheese only for last few minutes of baking so it melts nicely but doesn't burn.) To make it even healthier, make a homemade cheesy sauce, a gravy (such as onion gravy), or just skip the topping.
Did I say this is yummy? ;) I really do think so... For this recipe you will need to:
- Prepare baked tempeh.
- Prepare vegan mashed potatoes.
- Place tempeh on bottom of casserole dish.
- Place mashed potatoes on top of tempeh and level out.
- Bake at 350 for 30 minutes. Potatoes will form a nice, but not hard, crust on the top.
- Add Daiya cheese.
- Enjoy!!! :)
