This is one of my favorite dishes to eat. It is super nutritious, super filling, and just plain good. It is vegan, as are most of the recipes here. I shred all of the veggies in the Ninja, with the exception of the broccoli florets. To make this tasty dish, you will need:
- Squiggly nooodles, prepared
- 2 teaspoons ginger
- 1 teaspoon crushed garlic
- 2 teaspoons orange juice concentrate (unsweetened)
- 1 yellow onion
- 1 head of cabbage, reg. or nappa
- 3 carrots
- 1 red pepper
- 3 cups of broccoli florets
- 1/4 cup sesame seeds
- 1 tablespoon sesame oil
- 1-2 tablespoons coconut oil
- 2 teaspoons soy sauce
- 1 teaspoon salt
- Heat your wok to medium high heat.
- Add coconut oil.
- Once coconut oil is hot, sautee onions for about 10 minutes.
- Add garlic, half of the sesame seeds, and ginger.
- Add all veggies, except broccoli.
- Sprinkle salt on veggies and let cook for another 10 minutes.
- Add broccoli & let cook for 5 more minutes.
- Add orange juice concentrate.
- Sprinkle with the rest of sesame seeds.
- Pour sesame oil and soy sauce on noodles and stir well.
- Add noodles to veggies and stir well.
- Enjoy!
