Egg Rolls

Who doesn't love egg rolls? And now  you can make some at home! Let's see, we'll need....

  • olive oil
  • 1 onion- diced
  • 1 head of cabbage- shredded
  • 2 carrots- peeled and shredded
  • 1 teaspoon ginger
  • 1 teaspoon minced garlic
  • 1-2 teaspoon(s) sesame seeds
  • 1/4- 1/2 teaspoon of salt (We use himalayan sea salt.) and/or Bragg's soy sauce (It's the real thing.)
  • 1 pack of egg roll papers. If you can't find anything vegan, you can use this bread instead and just scoop the filling inside and not fry.  (You can find them in the produce section near the tofu.)
  • 2 tbsp flax blended into 3 tbsp water (for binder)
  • duck sauce for dipping. :o)






First of all put a few tablespoons of olive oil in your wok or frying pan. When it has heated up a little add your ginger and garlic. Keep stirring it and when that is smelling very nicely after just a few minutes add your onions and let them caramelize a bit. Then add your cabbage, carrots, and sesame seeds.
 This is what it will look like.

Let this all cook about 20 minutes, stirring occasionally, and then add your salt and/or soy sauce.

Now is the fun part! You set this aside and let it cool for just a few minutes.

Get your bowl of flax mixture, brush, and egg roll papers all situated and ready. I usually take some of the filling out the wok, put it in a bowl and place it on my 'work area' so that I can have everything I need at hand, and just refill the filling bowl as needed.

Now, lay out your egg roll paper. Dip the brush in the egg and 'paint' the outer perimeter of the egg roll paper with flax mixture. This will act as glue. Put 1-2 tablespoons of filling in the egg roll paper. Now is the tricky part. Roll the egg roll. Follow these steps.

Fold one corner over mixture and actually tuck under.



Fold the corners to your left and right in over the first fold.



Roll it forward and Walla! 

Next you place egg roll in a pan of olive oil that is heated and ready for it. Here we go.......


 
Make sure you brown all sides of the egg roll.
It really is better that way! It takes only a few minutes for each side to brown.


I make them as I cook them because the egg roll papers will tend to fall apart if you make them all at once.

Are you ready for the finished product? All you need is some duck sauce (or whatever kind of sauce you prefer, or no sauce...) and you will be ready to enjoy!
