This rice is really tasty, and goes especially good in the combination above! This recipe was slightly adapted from a recipe at ChipotleFan.com. Highly recommended! :)
You will need:
- 1 1/2 cups dry organic Jasmine rice
- 1 tablespoon coconut oil
- the juice of one lemon
- 1/2 cup fresh cilantro
- salt to taste
- Put oil in pan on medium heat. Add rice and stir around a bit.
- Pour on lemon juice and let cook for about 2 minutes, stirring constantly.
- Add 2-4 cups water.
- Cook until done.
- Strain if needed.
- Add cilatantro and salt, and stir.
- Enjoy! :)
