To prepare black beans that taste good and are kind to your digestion, you must do a few things. First, cook the black beans for about an hour and then change the water. You can go ahead and cook the beans in the second water or change once more to make them even easier to digest.
I normally go ahead and cook in the second water. I cook on medium, stirring at least once every 30 minutes to an hour until they are done. I add crushed coriander seeds to the cooking water, and I think this adds a nice flavor to the beans. Once they are done you can salt as desired. Enjoy! :)
