This recipe creates an oatmeal based cheese substitute that can actually be sliced and is quite good. The recipe is not that difficult to make at all. I say give it a try! :) (I discovered this recipe online at Wellsphere) I modified the recipe very slightly. I ate most of this cheese by itself, though it is very good on wheat thins too! :)
For this recipe you will need:
- 2 cups of water
- 1/2 cup of nutritional yeast
- 1/3 cup of oatmeal
- 1 tablespoon raw sesame seeds
- 4 tablespoons arrowroot
- the juice of half a lemon
- 1 tablespoon onion powder
- 1/2 teaspoon garlic powder
- 1 teaspoon salt
- Mix all of the ingredients together very well in a blender, such as the Ninja.
- Heat the mixture on the stovetop, using medium heat & stirring constantly, until it becomes quite thick.
- Transfer to oiled dish.
- Put in fridge for @ 8 hours.
- Lick bowl- yum! :)
- Enjoy the rest 8 hours later!

Any ideas why mine may not have set up?
3 possible reasons:
1. Make sure you use enough oatmeal and arrowroot as they are the thickeners.
2. Make sure you heat the mixture long enough. It will get quite thick when heated properly. Use low to medium heat and stir constantly. You will probably be doing this for about 10-15 minutes total- waiting for the stove to get hot enough and stirring until it is thickening. It will get quite thick. Don't take off stovetop until it does.
3. Letting sit in fridge for the full 8 hours.

I think I probably didn't cook it long enough. I thought it was thick enough but if it takes 10-15 minutes to get the correct consistency then it probably wasn't thick enough. After seeing that it hadn't set (after chilling overnight) I just scooped it up & ate it with crackers anyway because it still tasted yummy. Will definitely try again though! Thanks!
