Yummy Vegan Spanish Rice Recipe

This recipe goes very well with these refried beans. I eat them side by side and mix them up a bit. :) Honestly, the two together are such a tasty and satisfying meal. Here is a picture of the ingredients to this recipe, with the exception of the cinnamon:
For this recipe, you will need:
  • 1 cup of rice (I used Jasmine rice- so fragrant!)
  • 1 tablespoon of coconut oil
  • 2 teaspoons of chili powder
  • 1 teaspoon of cinnamon
  • 1 onion, chopped
  • 1 large bell pepper, or a few small ones, chopped (A Ninja will chop them nicely and quickly.)
  • 1/2 teaspoon of salt, or to taste
  1. Using medium heat, melt the coconut oil in a pan. 
  2. Pour in the one cup of rice, spices, onion and peppers. 
  3. Let toast for 5-10 minutes, stirring often.
  4. Add about 2 cups of water and put lid on pot.
  5. Cook as you would normally cook rice.
  6. 20-30 minutes later, dish will be done.
  7. Add salt to taste.
