Yummy Vegan Pancake Recipe

This vegan pancake recipe is adapted from one on vegetarian.about.com. I made a few changes, as I usually do. They turned out quite well and very yummy!

For this recipe you will need:
  • 2 cups flour
  • 3 tablespoons baking powder
  • 1-2 tablespoons sugar
  • 2 tablespoons coconut oil
  • 2 cups water
  • 1/2 banana
  • few sprinkles of cinnamon, optional
  • 1/4 teaspoon sea salt
Squish banana well with a fork. Add it to flour, baking powder, and sugar, and salt mixture (cinnamon optional). Add coconut oil. Blend ingredients together well (I use my hand) to create a damp mixture.Next, add the water and stir well. Let batter sit for about 5 minutes.

Next, turn an eye on medium heat and grease frying pan before putting in the first scoop of batter, and in between each scoop. Here is a pancake cooking:

When you see lots of bubbles and the corners look done, give it a flip.

Cook until all the batter is gone. Here's our stack of pancakes:

These are good with fruit syrup or pure maple syrup.
