Vegan Tahini Sauce/ Sour Cream Recipe

While experimenting with almonds and making gyros, I came up with sauce. It is just lovely the way blended nuts create a creamy sauce. And if you chill it before serving, it makes it all the better. This sauce is good with this pita bread, filled with veggies and falafel.
For this recipe you will need:

A blender - I use a Vitamix
1 cup soaked cashews
1/4 cup sesame seeds
1/2 cup water or milk substitute - add more slowly if needed
1/4 cup lemon juice
1 tablespoon maple syrup
Add fresh parsley right before serving

Add all of the ingredients to blender and blend very well. You will need to blend until creamy, and having a good blender really helps.  Refrigerate for a few hours and serve. Enjoy!
