Our New Year's day ongoing meal... yummy black eyed peas and turnip greens


This year we had black eyed peas, as usual. I'm not superstitious but I do enjoy black eyed peas! I was on the phone with my hubby while I was picking out the greens and he told me to get the turnip greens, so that is the green we ended up with this year.

Here is the yummy vegetarian black eyed pea recipe:

bag of black eyed peas
tsp of minced garlic
about a tablespoon of coconut oil
half a tsp of coriander seed
half a tsp of cumin
one to two tbsp of dried parsley
one onion, diced
salt to taste

I put the beans in the crock pot, with about an inch or two of water extending over the beans. All of the ingredients went into the crock pot, and it simmered for six hours. Once cooking time was complete, the black eyed peas were ready to eat. Did I mention they were yummy? I think I'll make some again soon....

As for the greens, I simply put them in a pot of water with some salt and butter and cooked for a few hours. There are so many different ways you can prepare them.... from boiling in water and finishing up by cooking in frying pan with the butter or oil, to adding peppers or spices- but we just had them the natural way. And we were happy with that. :o)
