Foodie Friday: Organic Cinammon Raisin Oatmeal Recipe (sugar free)

Share this page:

I have always wanted to like oatmeal, and with this recipe, I finally do! I think that using Red Mill Organic Scottish style oats certainly helps, too. It just tastes better than regular oatmeal to me. This is one recipe you will want to try. Oats are heart healthy and nutritious. Cinnamon supports good blood sugar levels. And stevia and raisins are good for you too! This makes 2 servings.

For this recipe you will need:
  • 1 cup Red Mill organic scottish oats oatmeal
  • 3 cups water
  • pinch of salt
  • 2 packets of stevia (I use NOW organic stevia)
  • 1/2 teaspoon of cinnamon, or to taste
  • organic raisins to sprinkle (we get ours from Whole Foods)

  1. Bring 3 cups of water (with salt added) to a boil, then turn down to medium.
  2. Add 1 cup of oatmeal.
  3. Cook until a good consistency, about 5 minutes.
  4. Add cinnamon and stevia.
  5. Spoon into bowls.
  6. Sprinkle with raisins.
  7. Enjoy!

Until next time.... God bless!

Munchin' Monday: On My Plate... Organic Decaf Coffee Drink (sugar free Mocha!)

Share this post:
I love me some coffee. Too much caffeine will get me wired and stressed though. So, I use organic instant coffee that is safely decaffeinated with carbon dioxide. You can read about the decaf process here.

This coffee drink can be made with milk or milk substitute. Right now I use water and milk... a little more milk than water. I am also currently omitting the walnuts just because I haven't picked up any; I am not using ice, and I am using lots of organic NOW stevia. The recipe for this yummy coffee drink can be found here. If you like the taste of coffee like I do then I suggest you give it a try. I really think it is one of the healthiest ways to enjoy coffee. :)

Recipe for a sweet, yummy, fruity lemonade- sugar free! :)

Share this post:

This is a drink that I came up with in an effort to satisfy two cravings, one for lemons, the other for something sweet. This drink tastes like a super sweet, tangy and fruity popsicle before it is frozen. Remember those kinds in the box that are basically artificial color, sugar (or high fructose corn syrup), and water? Well this tastes like that times 100! :) This will make one drink. You will need:

  • Juice from half of a lemon (freshly squeezed) ( Thanks Mom for the lemon juicer! :)
  • 1-2 packs of NuNaturals stevia (it's yummy)
  • 10 oz. of water
  • a fruit flavored tea bag- choose the flavor you like best. I like Celestial Seasonings blueberry or Raspberry. Yum!
  1. First I put the water in my cup.
  2. Then I pour in the lemon juice.
  3. I add my stevia.
  4. Then I add one tea bag, and let steep for a few minutes. The lemon juice really speeds up the process.
  5. Then I remove the tea bag, stir well, and drink! :)
  6. Repeat as needed. lol
  7. If you want to make this on a grander scale, just multiply the ingredients by however many servings you need.
Until next time.... God bless!

Yummy Vegan Mocha Recipe, Sugar Free Version

Share this post:

I have been very successful for a while now at cutting down my sugar intake drastically during the week. However, the homemade iced mochas my hubby and I have been drinking on the weekends had become problematic, in that I wasn't satisfied with the taste unless I used sweetened almond or soy milk. Until now. :)

After trying lots of different approaches I have finally (and happlily) settled on the following recipe. It really does matter what brand of stevia you use for this. NOW Foods organic stevia is non bitter, tastes great, and can be found at Whole Foods.

The following will make 4 10 oz. iced mochas.

For this recipe you will need:

  • 5 cups of unsweetened almond or soy milk (or milk of your choice)
  • 2 tablespoons cocoa
  • 2-4 tablespoons instant coffee (I use Mount Hagen Organic-Cafe, the safest and healthiest available locally, at Whole Foods.)
  • 7 packets of NOW organic stevia, or about a dropperful of the liquid. (I now prefer the liquid.)
  • 1 tablespoon walnut pieces (optional, adds frothiness and a nice taste)

  1. Put all ingredients into blender. (I recommend the Ninja.)
  2. Blend for about two minutes.
  3. Pour in glass over ice.
  4. Enjoy! :)

Until next time.... God bless!

Review of NuNaturals Stevia Products, Yum! :)

Share this post:

Where do I begin when talking about these great tasting products? I'm not sure exactly how they did it, but they have taken stevia to the next level. These products are close to my heart, because I have been diagnosed with PCOS, which includes insulin resistance. However, our society is suffering from a sugar and high fructose corn syrup overload, so stevia is good for everyone.
True, stevia may take a bit of getting used to. When I first tried stevia, I thought it was ok, but sometimes I thought it needed an extra umph. But the way Nunaturals prepares it, it is sweeter with most of the bitter aftertaste removed.
I sometimes combine some of the Nunatural products to get a sweetness and flavor I like. For example the vanilla stevia liquid extract coupled with the  cocoa bean liquid extract go well in some recipes. Sometimes just a packet of stevia will do. And sometimes when I want to sweeten my usually non sweetened herbal tea and lemon I'll throw in a NuStevia quick dissolve cap.
Seriously, these guys have every kind of stevia mixture you can imagine, including stevia for baking that you can use to replace exact portions of sugar in a recipe. (To do this they add natural fillers that act as fiber.)
Also, they offer products such as erythritol crystals, which are actually a naturally occurring sugar alcohol. This product and stevia are both a ZERO on the glycemic index, and they contain NO calories. Now that's SWEET! :)

BTW, these product are MSG FREE!

Visit NuNaturals to buy these yummy products for yourself. You can also enter the Giveaway to win a box of 50 packets of stevia and a bottle of liquid vanilla stevia. Yum! :)

Apple pie recipe - vegan and sugar free :o)

Share this page:

My daughter and I made an apple pie about a week ago. She did a marvelous job of assisting me, including placing the dough on top of the pie. As you can see from the picture, she even made a heart:

I found the recipe for the vegan pie crust at Vegfamily.com. I, of course, modified it a bit. :o)
For the crust portion of the recipe you will need:
  • 3 cups unbleached flour (I often mix in about 1/3 wheat flour)
  • a pinch of salt
  • ¾ cup coconut oil
  • water, as needed
  1. Pour your flour into a pan.
  2. Add the salt.
  3. Spoon in the solid coconut oil. (Put it in the fridge for a bit to get it solid if it is not.)
  4. Use your hands to work the coconut oil into the flour. You will have a damp crumbly flour with little to no lumps once it is sufficiently mixed.
  5. Using a spoon, stir mixture while you slowly add flour as needed to form a stiff but pliable dough.
  6. Separate dough into 2 portions. One for top and one for bottom.
  7. Stretch dough into pie tin. If you are not using a non stick pan, grease with a bit of coconut oil.
  8. Roll out the remaining dough flat and cut it into strips for the top. Set aside.
Next we will prepare the pie filling portion. You will need:
  • Four apples, chopped and peeled
  • About 3/4 cup of water
  • 1 tsp. cinnamon
  • pinch of ginger, optional
  • About cup of agave nectar or date sugar
  • 1 tablespoon agar agar or arrowroot
To prepare:
In a saucepan on medium heat, mix the water, spices, and sweetener.
Add the apples. Cook them in the mixture for a few minutes if desired.
Then, spoon into pie crust. Here is a pic of ours at this point:

Add the top crust portion.
Bake at about 325 until crust is a golden color.
Enjoy!

Until next time... God bless! :o)
