Meatless Monday: On My Plate... Yummy coffee with yummy soy creamer

While not technically on my plate, this has been in my cup a lot lately. I am using my daughter's mug. Isn't it cute?? This is Mount Hagan Organic-Cafe Coffee, which is decaffeinated with carbon dioxide. I use NOW stevia as a sweetener, and soy creamer from Organic Valley. YUM! :)

Meatless Monday: On My Plate... Cinnamon Raisin Oatmeal (Homemade and sugar free)



I've always wanted to like oatmeal, and know I finally do! :) This recipe is very yummy, and quite healthy. I will be posting the recipe this Foodie Friday, so stay tuned for that- or check the recipe index.

Meatless Monday: On My Plate... Sunshine burger and Daiya Cheese! :)


We picked up a new type of veggie burger at Whole Foods this week... the original Sunshine burger. (See review section of YVD for review of Sunshine burger.) Since my allergies have been acting up, I chose a vegan cheese this week- Daiya cheese. (Again, see review section.:) The bun is a Trader Joe's stone ground whole wheat bun.

I actually ate this yesterday, but may eat another today. Speaking of yummy food, we also picked up some salsa  made from peaches (made in-store)... quite possibly the best salsa I've ever eaten! It was so yummy! I'll have to pick some more up to blog about, cuz we ate it all! ;)

Meatless Monday: On My Plate... Simple Snaps



You don't always have to be fancy to eat a healthy dish. Here I have Trader Joe's frozen snaps. I put the snaps in a bit of water, added some Celtic Sea Salt, and cooked them in a pan on the stove top until tender.
Very yummy.

Meatless Monday: On My Plate... Trader Joe's Veggie Burger and Whole Wheat Bun



Yesterday while shopping at Trader Joe's I noticed that they have a new veggie burger. We decided to get that, then moseyed on over to the bread aisle and picked up some Trader Joe's brand wheat buns that turned out to be yummy.

Also on my veggie burger is Horizon's organic cheese from Whole Foods, and Trader Joe's ketchup and mustard. Overall a yummy lunch! :)

Munchin' Monday: On My Plate... 365 Organic Cheese Tortillini


I picked this up at Whole Foods yesterday in the freezer section. Today for lunch I boiled it to perfection (I guess!:) and added some pasta sauce. This was lunch for my husband, one of my daughters, and I.

For those of you interested in what type of enzyme your cheese is made from, the packaging states microbial enzymes for this product. It cost around $4, has about 4 servings, and tastes good. Oh, and it is organic, which is always a plus.

Munchin' Monday: On My Plate... Eden Organic Black Bean and Quinoa Chili



You know Eden Organic's Black Bean and Quinoa Chili has to be healthy.  It is made with all organic ingredients. In addition to the black beans and quinoa, it contains onions, mushrooms, and spices. And one can of this chili supplies 40% of your daily allowance of protein, and 30% of your daily allowance of potassium. 
Eden Organics is the only company that I know of that consistently uses bpa free cans. The canned food that has tomato based products by this company does have some bpa, but they claim that it does not get into the food. (Learn what bpa is and learn how to avoid it.) Munchin' Monday: On My Plate... Avocado Chocolate Pudding

This is in my bowl almost everyday. I have been eating avocado chocolate pudding for about a year now (not continuously, lol:). I think it is delish. I put it in the bowl and made it look pretty for this picture, but usually I eat it right out of the Ninja. Want to make this? Click here for the chocolate avocado pudding recipe.

Today for a late dinner I had some leftover Chinese style vegetables and Jasmine rice. I am planning to post the recipe this Foodie Friday. This dish is very tasty and nutritious. And that is what was in my bowl today... :)

Munchin' Monday: On My Plate... Trader Joe's Vegetable Masala Burger

Trader Joe's Vegetable Masala burgers are tasty and economical. (Read review here.) A box of 4 is like $2. They are potato based with veggies like corn and carrots mixed in, along with Indian spices. I like to eat this veggie burger on a bun (had to make my own today:), with organic cheese (Horizon brand I think). I also put ketchup and mustard on my veggie burger, and it is yum to the e.

Munchin' Monday: On My Plate... Organic Decaf Coffee Drink (sugar free Mocha!)

I love me some coffee. Too much caffeine will get me wired and stressed though. So, I use organic instant coffee that is safely decaffeinated with carbon dioxide. You can read about the decaf process here.

This coffee drink can be made with milk or milk substitute. Right now I use water and milk... a little more milk than water. I am also currently omitting the walnuts just because I haven't picked up any; I am not using ice, and I am using lots of organic NOW stevia. The recipe for this yummy coffee drink can be found here. If you like the taste of coffee like I do then I suggest you give it a try. I really think it is one of the healthiest ways to enjoy coffee. :)
