Foodie Friday recipe: Chinese style veggies and rice

On Monday I said I would share this recipe with you. So, here I am sharing. :) This is a tasty and healthy dish that is relatively quick and easy to make.
I mixed the veggies with Jasmine rice. Simply follow the packaging instructions to prepare the rice. I add a bit of coconut oil to the water before pouring the rice in.

The ingredients that I used for the veggies are:
  • sweet onion
  • 2 chopped carrots
  • about 1/3 of a cabbage
  • around 2 cups of brocolli
  • about 2 tablespoons of coconut oil
  • 1 tablespoon of ginger
  • soy sauce to taste
You can use whatever veggies you like in this recipe. A little sesame oil added to the coconut oil will give this dish a more traditional flavor as well.

  1. With my wok on the stove top at medium heat, I added the coconut oil.
  2. Next I added the ginger and stirred it into the melted oil.
  3. The onions came next. I let them cook for about 5 -10 minutes.
  4. Then I added the carrots and cabbage and let cook for around 10 minutes.
  5. Finally, I added the frozen brocolli, and let the veggies cook until the brocolli was no longer frozen and was done.
  6. Then I added some soy sauce, and it was done! :)
  7. My husband and I ate the Chinese style veggies with the Jasmine rice, and I even ate the leftovers a day or two later.

Today for a late dinner I had some leftover Chinese style vegetables and Jasmine rice. I am planning to post the recipe this Foodie Friday. This dish is very tasty and nutritious. And that is what was in my bowl today... :)

Amy's Teriyaki Bowl Product Review

Anytime I don't cook from scratch and we get a frozen meal, this is what I want (at least lately! :). It is soo good. The dish consists of brown rice with tofu and veggies (green beans, mushrooms, carrots, water chestnuts, and bell peppers) and a delectable sweet Terriyaki Sauce.

The amount that is given is enough to fill one bowl, as you can see above. However, it is quite filling. There are no trans fats, no added msg, and no preservatives. Also, it is non GMO- very important. The entire bowl is 290 calories and 4.5 grams of fat. It also provides 12 grams of protein, 50% of the daily allowance of vitamin A, 40% of the daily allowance of vitamin C, and 100% of the daily allowance of YUM! :)

Tyling Naturals Chinese Noodles Review


These are some of my favorite noodles to use. They are really just fun! I call them squiggly noodles. They hold flavors extremely well. I usually drizzle a little soy sauce and toasted sesame oil on them before I mix them with asian style stir fry veggies. 

They are quite wholesome (& vegan), containing only wheat flour, salt, and water. A serving of these contain 190 calories, half a gram of fat, only 1 gram of sugar, and 8 grams of protein.

They can be faithfully found at your local Food Lion in the Chiese/Asian specialty section. They are around 2 bucks. I give them 2 thumbs up and recommend you give them a try! :)

Chinese dumplings filled with veggies

I was looking for an alternative to the basic egg roll recipe, so I decided it would be a good idea to put egg roll filling in dumplings. I searched online and found a very nice vegan Chinese dumpling recipe on chinesefood.about.com. I filled these dumplings with egg roll filling. Skip on over to the egg roll  page to learn how to prepare the filling. I'll wait....

Now that you're back, let's talk dumplings. These were easy to make, and so fun to do. Sure, they took a little time, but it was a rewarding venture.  The dough recipe is simple. You will need:

  • 3 cups all-purpose flour
  • up to 1 1/4 cups cold water
  • 1/4 teaspoon salt
  1. Mix the following together and put a little olive oil on the dough ball so it will be easier to work with. Separate your dough into about ten pieces.
  2. Then, one at a time flatten out your dough pieces and put a teaspoon or two of filling in the middle. 
  3. Next, fold dough over and press edges together.
  4. Then take a fork and make pretty designs along the outer perimeter that you joined, making the union stronger.  
  5. Here is what mine looked like during the process. Not a great pic, but you can get the idea. Notice how the dumplings are in different stages of preparation:
6. Once you have your dumplings ready, put them into a pot of boiling water. I put some ginger, sesame oil, and soy sauce into the water to flavor it.
7. Stir dumplings immediately to separate them, then let them cook for about 30 minutes.
8. To add more flavor to your dumplings, stir fry them in a little sesame oil until slightly crisp on both sides.
9. Add soy sauce and serve.
10. Enjoy! :o)

Sweet and Sour Chinese Style Veggies and Rice

This is a recipe that I really like. It has a sort of sweet and sour flavor, yet no sugar or corn syrup. Yay! This recipe will make about 4 servings.

To prepare this dish you will need:
  • cooked brown rice
  • 2 yellow sweet onions, diced
  • 1 celery stick, diced
  • 1 bag of frozen organic broccoli
  • 1/2 a bag of frozen cauliflower
  • 2-3 carrots, shredded
  • 1 tsp. ginger
  • 1/2 or 1/4 teaspoon of salt
  • 1 tablespoon crushed garlic
  • 1 tablespoon coconut oil
  • 2 teaspoons sesame oil
  • soy sauce to taste
  • 3-4 tablespoons of sesame seeds
  • 1 tablespoon of lemon juice or apple cider vinegar
  • a tablespoon or so of maple syrup 

I use my wok to prepare this.

  1. First put your coconut oil into the wok and let it come to medium temperature. 
  2. Next, add onions and garlic. Allow these to sautee for about 15 minutes. Add the salt to bring juices out.
  3. Next add ginger and half of the sesame seeds.
  4. Add frozen broccoli and cauliflower. Let cook for another 15 minutes.
  5. Now add the shredded carrot and diced celery. Let cook for about 10 more minutes.
  6. When dish is done cooking, add the rest of the sesame seeds, the sesame oil, soy sauce, and honey.
  7. Serve with brown rice. (It's healthiest!)
  8. Enjoy! :o)

Snaps and fennel recipe- yum yum!

I first tried fennel when eating at the Whole Foods cafe. It was on the buffet among other yummy foods. Needless to say I loved it and recreated it at home. My version is slightly different, as I have added a few things to my liking. Honestly, I had never had fennel before. It is really good. If you haven't tried it, do. The only place I can find that sells it is Whole Foods though, actually. This dish is extremely flavorful. I eat it as a main dish, which may sound strange to some people. However, as some trains of thought go, I find that I am more satisfied and eat less when I focus on one food at a time. Sooo without further ado... here is the ingredient list (it's quite simple):

  • 2-4 cups snaps (I use Trader Joe brand, frozen- affordable, fresh, and very good)
  • 1 fresh fennel, cut in strips (available at Whole Foods in the produce section, is organic)
  • small amount of toasted sesame oil for cooking (and coconut oil, optional)
  • soy sauce to taste
I use my wok for this recipe. You only need to use a small amount of oil if your wok is seasoned. To make this recipe simply:

  1. Turn eye on to medium/high heat.
  2. Add oil to wok. You can cook this with a small amount of coconut oil and then add a small amount of sesame oil at the end along with soy sauce for flavoring, or you can use sesame oil soley.
  3. Add fennel. You will need to cook it alone on low temp. covered for about 10 minutes. This should be sauteed just as onions are. 
  4. Next add the fennel. Stir and cover.
  5. Remove after about 10-20 minutes.
  6. Add soy sauce (and sesame oil if you haven't already) to taste.
  7. Enjoy!

Egg Rolls

Who doesn't love egg rolls? And now  you can make some at home! Let's see, we'll need....

  • olive oil
  • 1 onion- diced
  • 1 head of cabbage- shredded
  • 2 carrots- peeled and shredded
  • 1 teaspoon ginger
  • 1 teaspoon minced garlic
  • 1-2 teaspoon(s) sesame seeds
  • 1/4- 1/2 teaspoon of salt (We use himalayan sea salt.) and/or Bragg's soy sauce (It's the real thing.)
  • 1 pack of egg roll papers. If you can't find anything vegan, you can use this bread instead and just scoop the filling inside and not fry.  (You can find them in the produce section near the tofu.)
  • 2 tbsp flax blended into 3 tbsp water (for binder)
  • duck sauce for dipping. :o)






First of all put a few tablespoons of olive oil in your wok or frying pan. When it has heated up a little add your ginger and garlic. Keep stirring it and when that is smelling very nicely after just a few minutes add your onions and let them caramelize a bit. Then add your cabbage, carrots, and sesame seeds.
 This is what it will look like.

Let this all cook about 20 minutes, stirring occasionally, and then add your salt and/or soy sauce.

Now is the fun part! You set this aside and let it cool for just a few minutes.

Get your bowl of flax mixture, brush, and egg roll papers all situated and ready. I usually take some of the filling out the wok, put it in a bowl and place it on my 'work area' so that I can have everything I need at hand, and just refill the filling bowl as needed.

Now, lay out your egg roll paper. Dip the brush in the egg and 'paint' the outer perimeter of the egg roll paper with flax mixture. This will act as glue. Put 1-2 tablespoons of filling in the egg roll paper. Now is the tricky part. Roll the egg roll. Follow these steps.

Fold one corner over mixture and actually tuck under.



Fold the corners to your left and right in over the first fold.



Roll it forward and Walla! 

Next you place egg roll in a pan of olive oil that is heated and ready for it. Here we go.......


 
Make sure you brown all sides of the egg roll.
It really is better that way! It takes only a few minutes for each side to brown.


I make them as I cook them because the egg roll papers will tend to fall apart if you make them all at once.

Are you ready for the finished product? All you need is some duck sauce (or whatever kind of sauce you prefer, or no sauce...) and you will be ready to enjoy!
